Mirdif City Centre48 NOVEMBER 2025 TIMEOUTDUBAI.COM Food Three Bros It’s Dubai on a plate – loud, fearless and impossible to pin down If Dubai cuisine ever needed a poster child, it would be this. Three Bros is the Orfali brothers’ (Mohamad, Waseem and Omar) latest playground – a compact, 22-seater bolthole opposite their already- famous Wasl 51 flagship. And while Orfali Bros. set the benchmark for narrative-driven dining in Dubai, this one takes that same restless creativity and turns the volume right up. The whole idea is that Three Bros belongs to no single cuisine, and that’s precisely why it feels so Dubai. The menu darts between Japan, Spain, Syria and France with zero hesitation, stitching together dishes that make sense only here. One bite you’re crunching through croquettes of comté and celeriac, the next you’re spooning into delicious and earthy morel chawanmushi or watching your ‘pidza’ (a pizza-pide hybrid) slide out of the oven. It has plenty of flair, as you’d expect, while there’s also a ‘hidden’ underground bar, Ly-La, boasting Bedouin vibes and on-trend tunes. There’s an open kitchen showing off a giant rotisserie, while the menu boasts a selection of classics with Middle Eastern touches. Don’t miss the tender, rich lamb shank, while the kunafa for dessert is excellent. O Open Sun-Wed 12.30pm-11.20pm, Thu- Sat 12.30pm-midnight. Gate Village 4, DIFC, alayarestaurant.com (04 570 6289). Set at the foot of Jumeirah Emirates Towers, with a view of the office blocks of DIFC, the restaurant is kitted out with twinkling lights and plenty of foliage. Food traverses the Middle East and North Africa with influences from Iran, Iraq, Turkey and Morocco. There’s plenty of mezze, plus tagines and grills. O Open Sun-Wed 6pm-2am, Thu-Sat 6pm- 3am. Jumeirah Emirates Towers, Sheikh Zayed Road, ninive.ae (04 326 6105) Sufret Maryam Time Out Dubai’s Best MENA Restaurant 2025, Sufret Maryam comes from Salam Dakkak, chef-owner of Dubai institution Bait Maryam in JLT. Her Wasl 51 venture is a lot bigger but still cosy, thoughtfully decorated with works from Middle Eastern artists and rustic knick-knacks. Nostalgic Palestinian and Jordanian dishes are elevated to the level you’d expect from such a renowned chef, beautifully presented and executed. O Open 9am-midnight. Wasl 51, Jumeirah 1, sufretmaryam (050 417 2272). fraîche and premium without feeling smug. There’s also real restraint in the fa-sol- yeh, where walnut pesto and Parmesan transform green beans into a full event. Aubergine royale is where Orfali flips the script and, instead of your usual turbot beurre blanc, highlights roasted and smoky aubergine instead. Proof that veg can party just as hard as premium seafood. Every dish at Three Bros feels tightly dialled, but never overworked. The balance is razor-sharp: fat from creamy sauces, salt from aged cheeses and cured meats and jolts of eye-popping acidity. Nothing lands on the table without purpose – whether it’s a crunch of grated hazelnut against the chawanmushi, or the char of burnt leeks on the doughy pidza. It’s food that’s playful on the surface, but beneath lies precision and intent. Interiors go for funky ’70s nostalgia – deep reds, geometric flooring, wood-fired oven on show – and staff match the mood: relaxed, quick with a smile, but laser- focused on the flow in the dining room. And then there’s the vinyl soundtrack: one minute you’re vibing to old-school Arabic pop, the next you’re nodding along to Saint Levant, before it switches to funky ’80s tunes. Slightly chaotic but perfectly in sync with the Three Bros spirit. Prices feel fair for cooking this ambitious, and that’s part of the point – serious food that doesn’t take itself too seriously. Three Bros is exactly what the city needs: a reminder that you don’t have to choose between cultures, genres or moods to eat well. O Open daily noon-6pm, 7pm-11.30pm. Unlicensed.
