And that old adage definitely rings true for this much-photographed dish. The Foie that Wanted to be an Apple is a beautiful and interesting plate that has flown on social media. It has become a signature at chef Dani García’s Leña because of its aspect of illusion. Resembling a green apple, it surprises diners as they discover it’s actually foie gras. HYPE DISH DISSECTION What goes into the Dubai plates filling up your feed Chef Mario Martinez explains to Time Out Dubai: “The concept arose when we stumbled across a mould with an apple shape in the kitchen. It was perfectly sized for the dish we envisioned.” The Foie that Wanted to be an Apple is an evolution of García’s remarkable nitro tomato (a smoked eel mousse shaped like a tomato). It is shaped in a different form and uses a slightly different technique but the core (ahem) idea remains the same. “Essentially it’s a mousse created using pastry techniques but adapted into a savoury dish,” adds Martinez. THE EXTERIOR As well as being designed to look like a piece of fruit, the dish has a hint of sweetness too. The savoury foie gras is doused with apple juice to enhance its flavour. THE CENTRE Foie gras mi cuit (that’s semi cooked foie gras) is combined with semi-whipped cream, which is used to achieve its supremely smooth and creamy texture. The Foie that Wanted to be an Apple at Leña Dubai THE ICON STATUS This photogenic plate has become one of Leña’s most iconic dishes in the restaurants in both Spain and Dubai, representing the sharing style of Spanish cuisine.
