For more family- friendly recipes, follow Clare on Instagram @claresfamilykitchen. 20 - 23_TOKU_1306_COOKING WITH CLARE_11007588_11221467.indd 2027/05/2020 12:24:26Food Time Out UAE Kids June 2020 21 Ingredients • 225g raspberries • 200g caster sugar • 2 large eggs, 4 egg yolks • 600ml double cream Homemade raspberry ripple icecream Method STEP 1: Put the raspberries into a blender along with 2 tbls of sugar and whizz to a smooth paste STEP 2: Place the eggs and remaning sugar in a bowl and whisk until paler in colour. Place over a pan of simmering water (must not touch the water!) and beat until thickened very slightly. Remove from the heat STEP 3: Beat the cream until stiff peaks, fold in the egg mix and put in a shallow Tupperware suitable for the freezer. Swirl in the raspberry puree, cover and freeze overnight. STEP 4: Serve in a glass or in a cone. Yum. Method STEP 1: In a frying pan, fry off a finely chopped onion. Then add ribbons of courgette and halved cherry tomatoes. STEP 2: In a bowl whisk the eggs with the milk, herbs and season well. STEP 3: Add egg mixture to the flrying pan with the peas and cook on a low heat, checking the bottom isn’t burning. STEP 4: Once the frittata is cooking around the edges and is cooked about 2/3 through, pop under the grill to cook the top. Watch carefully. STEP 5: Serve hot or cold. TIP: You could make the ice cream with any berries. TIP: Fussy eaters? You can throw in any vegetables your little ones will actually eat. 20 - 23_TOKU_1306_COOKING WITH CLARE_11007588_11221467.indd 2127/05/2020 12:24:36Food 22 June 2020 Time Out UAE Kids Watermelon fruit popsicles Ingredients • ½ (half) watermelon • 1 kiwi • 1 cup plain yoghurt • Popsicle/ice lolly moulds Method STEP 1: In a blender make a smooth puree out of half the flesh of the watermelon (be careful to remove all the seeds). STEP 2: Then in the blender make a puree out of 1 peeled kiwi STEP 3: In popsicle moulds carefully pour in the watermelon puree, to about 2/3 full. Add a spoonful of plain yogurt, and then top with a small amount of kiwi puree. Repeat in all 6 moulds and put in the freezer overnight. 20 - 23_TOKU_1306_COOKING WITH CLARE_11007588_11221467.indd 2227/05/2020 12:25:02Food Time Out UAE Kids June 2020 23 Crispy fish tacos Ingredients • 1 pack 12 taco shells • 1 large white fish fillet cod/hammour/ haddock • ½ cup plain fkour • ½ cup cornflour • Salt and pepper • Pinch dried oregano • 1 cup red cabbage thinly sliced • 1 cup iceberg lettuce thinly sliced • 1 small cucumber thinly sliced • 2 heaped tablespoons mayonnaise • ½ lime juiced TIP: These are the perfect low- sugar treats as the temperature rises. Method STEP 1: Slice the fish in strips, and roll in the flour mix (flour, cornflour, oregano and salt and paper). Put a small amount of oil in a saucepan and shallow fry until fish cooked through and golden brown. Cook in batches of 3 or 4 strips at a time. STEP 2: Heat the taco shells in the oven for 5-10 minutes and prepare all the vegetables and arrange in bowls on the table. STEP 3: To make the dressing mix the lime juice and mayonnaise. Place in a bowl. STEP 4: Serve everything up in bowls on the table so that everyone to make their own DIY tacos. Star with the fish and mayonnaise dressing and let them load up their tacos with whatever they like. And it’s a lot to take in. Not just because it’s set over three floors – the space is crammed with plants, a labyrinth of cosy nooks and an open kitchen that runs the back length of the middle floor. You’ll need to make more than a single visit to fully absorb your surroundings. But should you? It really depends. This neighbourhood is home to far more than a handful of Dubai’s best restaurants. While the food isn’t city-beating, certainly in the area there’s little competition left when it comes to Latin American cuisine. And if that’s what you’re here for (in addition to one of the splashiest settings in town), you won’t leave disappointed. Amazónico’s array of raw and marinated fish dishes put on a good start – the aguachile red snapper ceviche is a particular highlight, served with avocado cream and warming jalapeño. From the ‘bites’ section of the menu, guacamole with sea urchin sounds like the kind of pairing we’ve waited a long time for, so it’s a disappointment to find the dish lacks any distinct flavour from that spiniest (and creamiest) of seafoods. Latin American eats by way of Madrid WHY GO... For nibbles and elaborate mixed drinks in the lounge Chimichurri-marinated skirt steak comes highly recommended, but while the steak itself has plenty of flavour, we struggle to detect much of the typically punchy marinade. It’s the same story with a side of queso grillado on the chimichurri front, but in this case we hardly notice. This is literally – literally – a pot of inch-deep Josper-grilled provolone cheese. Your doctor may not thank you, but you certainly will. Amazónico certainly serves up plenty of flair and flamboyance, and the mixology is a clear hit with the crowds in the lounge. As for the food? Fun, sure, but largely just fine. The monumental grub – in every sense of the word THIS BARSHA HEIGHTS pub is never short of a few sports fans. In fact, it attracts a regular barmy army. And given an army marches on its stomach, they’ve come to the right place. The menu is a who’s who of British pub classics, and the portions are, at times, gobsmacking. Even the sandwiches are less doorstop (or step), and more good-luck-fitting- one-through-a-front-door. The BLT and toasted Cuban (pictured) in particular are absolute belters. Better yet, it’s all homemade, right down to the pie of the day, which always comes (and the importance of this cannot be overstated) fully encased in buttery, golden pastry. While it’s not the cheapest pub in town, it doesn’t stop the place filling up nightly. And there’s great value to be found on a daily basis, with rotating two-for-ones on the likes of roast dinners and fish and chips, plus a weekday lunch deal where a main course and house beverage will set you back a crowd-pleasing Dhs65. The authentic fry-ups are a best-seller, loaded with all the meaty extras, as well as fried eggs, mushrooms, baked beans, grilled tomato and hash browns. Whether or not you’re local to the area, big into your sports or a whizz when it comes to the dingbats round in a pub quiz, Crown & Lion should be top of your list for a proper pub feed. YOU MIGHT NOT always find three-Michelin starred chef Heinz Beck heading up his kitchen at this exquisite Italian eatery on the Palm, but his world-famed influences are felt in each of his impeccably presented dishes. Ideal for an intimate dinner with friends or a romantic evening with your other half, the restaurant itself is smart, sophisticated and beautifully designed, while a huge wraparound terrace offers outside seating and great views in Dubai’s winter weather. The entire experience is exceptional. A tasting menu, which changes according to the season or a particular theme, is the perfect way to sample a selection of Beck’s signature dishes. An unpretentious menu houses standouts including the duck foie gras variation – foie gras done three ways, cubed, mousse and crumbled – and beef tartare paired with a sweet quail’s egg. For mains, don’t miss mushroom tortellini on spinach foam with black truffle or the black cod accompanied by beetroot and orange and given a spicy kick thanks to a dollop of fiery wasabi. Try not to leave without trying the banoffee and tiramisu – molto buono. Service is excellent throughout, too, friendly and efficient. We are spoilt with such a vast choice of celebrity chef-helmed eateries in Dubai, and but Social by Heinz Beck is up there with the very best. WHAT IS IT... And if you could look at the dining scene on Al Maryah Island you’re spoiled for choice. Combine both and you have two absolute stunners to choose from. We’ve spoken about and written extensively about the one beginning with Z (and have provided the venue with enough awards to fill a cabinet) but nearby, in that little bit where The Galleria Al Maryah Island morphs into the Four Seasons hotel is 99 Sushi Bar & Restaurant. The restaurant first appeared in Spain but make no mistake, this is a Japanese restaurant through and through. From the sushi counter seating in front of the chefs preparing the dishes to the menu filled with terms such as tobiko, usuzukuri and katakuchi iwasi, this is a slice of the Far East in the Middle East. Usually we’d be telling you to grab a seat in the incredibly impressive restaurant, and while it did open for dine-in in May, there’s also a super delivery service available. If you do visit, everything from the water feature outside to the dimly lit bar area and the super- cool dining room will impress. And between the décor, the service and the menu, you can tell nothing has been left to chance in this place. The attention to detail is superb. But if you prefer to stay at home at the moment, the team will deliver some of the restaurant’s superb food to your door. It even “Order for a special occasion” WHAT IS IT... Pretty much everything on the menu is available, and while you might not fancy getting a Dhs365 uni sashimi plate or a Dhs650 piece of Kobe beef delivered in a plastic box, there are plenty of more affordable options than those that will still ping off the palate without emptying your bank account completely. We’ve always been big fans of the salmon and tuna dishes here as well as the likes of baby squid tempura and scallop nigiri, which are all more in line with your usual takeaway prices. This is a takeaway for a treat, rather than an everyday occurrence, but we all deserve a bit of self-love from time to time, don’t we? We’re well aware that lots of people love this friendly Italian restaurant, but whenever we visit we’re still surprised to see how many people agree with us. Sitting outside on the terrace is just lovely, we hope we can get back out there soon. Until then, however, the restaurant is offering a delivery service, alongside some of the veteran hotel’s other favourites (Trader Vic’s, Indigo, Benihana and Loaf). We’re often in the mood for a full-on carb fest, which is lucky because it’s what Pregos does best and the menu (available between noon and 7pm every day) consists entirely of pizzas. So we’ll have to wait until the next visit to try that soft, freshly baked loaf of Italian bread that comes to the table with olive and sun-dried tomato tapenades. And the venue’s brilliant pasta dishes will have to remain as tasty memories while we’re socially distancing. Prego’s O Delivery available noon-7pm. Beach Rotana Abu Dhabi, Al Zahiya (02 697 9027). WHAT IS IT... A very popular Italian restaurant WHY GO... For the satisfying pizzas THIS PLACE IS a charming Asian restaurant with top service that has been keeping people in Abu Dhabi well fed for years now. Along the way it’s picked up a couple of Time Out awards, too. It might not be in the swankiest of hotels, or the flashiest part of town, but that’s no reason to turn your nose up at Cho Gao. In fact, it makes us love it even more (and the hotel also has the super Spaccanapoli and Heroes inside). We still return to the pan-Asian restaurant whenever we can. There are no airs or graces about this place, it’s all about the great food, brilliant service, and good- value menu and offers, and once it’s open again we’ll be back once more. Until then, however, you can order delivery through most of the usual platforms. Most of the starters are around the Dhs60 to Dhs80 mark, so not the cheapest takeaway you’ll ever have, but portions are big and the food is very good. Mains are, on average, about Dhs80 to Dhs100. Curries start at Dhs75, steamed jasmine rice is an extra Dhs30. You have to start with the wasabi prawns, an absolutely classic dish and a huge portion. Don’t worry, the Japanese horseradish won’t blow your head off. It’s an all-round winner. Next, try the wok-fried vegetables and a side of steamed rice. It’s another whopping plate of food, with the rice it’s definitely enough for two if you’re also having starters and are ordering a dessert. The veg retains crunch and the Szechuan adds a kick. Of course, you won’t get the chance to interact with the restaurant’s wonderful staff while you’re at home, but that’s another excuse to return when this is all over. Those wasabi prawns are excellent Instead, feast on an excellent pizza. The pollo e fungi pizza is delicious, and last time we tried it, we couldn’t help finishing every slice of the thin dough topped with tomatoes, mozzarella, mushrooms, red onion and chicken. At Dhs 65 it’s worth the extra bit compared to your usual cheap takeaway. When all you want is comfort food, Prego’s is usually the place to head. At the moment, why not get that feeling delivered. MUMMY AND DADDY TIME GO WITH THE GANG 26 - 27_TOKU_1306_EO REVIEW ABU DHABI_10153777_11221464.indd 2727/05/2020 12:31:0828 June 2020 Time Out UAE Kids When you’re a child, science is just a fancy word for magic, which is why these experiments will wow the kids Little Einsteins Water Walking You’ll need seven glasses of water for this one: three empty, one with red food colouring, one with blue colouring, and one with yellow coolouring, or any colours that you happen to have in your baking cupboard. Arrange them in a line, alternating coloured and empty glasses. Fold six squares of paper towel in half and then half again and make bridges between the containers with the folded paper towels. Your kids can watch as the coloured water walks over the bridges and into the empty containers, filling up the empty glasses with coloured water and giving them a first-hand look at the magic of capillarity. Magic Milk Put a few drops of food colouring in a shallow bowl of milk and watch as they form little self-contained blobs. They will stay like that until you get your mini scientist to add a little dishwashing liquid to a toothpick and touch the food colouring that will make the colours swirl around on their own like magic. It all has to do with surface tension. At first, the food colouring stays on the surface, but the soapy dishwashing liquid causes a chemical reaction that breaks the surface tension. Mold Science Mold experiments are always fascinating when you’re a child. Kids can see how different additives (salt, vinegar, dirty hands, rubbing the bread on an ipad etc) affect the growing of mold on a slice of bread. A great idea to encourage them to wash their hands Instant Ice Frozen fans can transform themselves into Queen Elsa... almost. All they have to do is chill water in the freezer until it’s almost frozen, then pour it over ice placed on an overturned ceramic bowl. Kids can see the transformation between the states of matter, and also discover how ice crystals are formed. Magic Milk Tea Bag Rocket Take the tea out of a tea bag, hollow it out and stand it up, and then set if on fire with a match (mums and dads, help is definitely required here). The hollowed-out bag is so light, it rises along with the hot air, and becomes a flying tea bag. Skittles Patterns Place some Skittles into a shallow bowl of water, and watch the colours swirl. Skittles are basically pure sugar and dissolve in water, so you can use this as in intro to solvents, solutes, and solutions. We wouldn’t advise eating them afterwards though!
