< Previous110 GAULT&MILLAU CHAMPAGNE INDEX ROSES DE JEANNE T he Roses de Jeanne house is located in the village of Celles-sur-Ource and was founded by Cedric Bouchard in 2000. Bouchard is recognised for his unconventional approach to champagne production and his dedication to expressing the terroir in his wines. It is a comparatively small vineyard, with less than two hectares under vine, yet it's famed for producing champagnes of remarkable quality and distinctive character. Each plot within the vineyard is treated as an individual entity, with its own distinct microclimate and soil composition. This meticulous attention to detail allows Bouchard to create champagnes that truly reflect the nuances of each plot. The house's champagne is known for its purity and intensity of flavour, achieved through the use of traditional winemaking techniques. Bouchard insists on using only the first press juice, known as 'la cuvée', and vinifies each plot separately. His champagnes are single variety, single vineyard and single vintage, a rarity in the region. This, coupled with low yields and minimal intervention in the winery, results in champagnes that are a true expression of the terroir, which is found in every release . He began to share his creations with others in 1921 with the bottling of his first commercial vintage, yet the house has since released only 37 vintages. To this day, Salon comes from a single hectare vineyard plot – the Salon Garden – complemented by nineteen other small plots in Le Mesnil-sur-Oger selected at the beginning of the 20th century by Eugène-Aimé Salon himself. The company passed to his sister following his death in 1943, before eventually being sold to Laurent Perrier in 1989. Today, the house is part of the Laurent Perrier group, along with Delamotte, while its signature Salon Le Mesnil 2002 and 2012 vintages are currently among the most sought-after bottles on the luxury secondary market. Located in the Côte des Bar, the partnership focuses on producing exceptional champagnes that reflect the region's distinct terroir, more akin to Chablis than the vineyards of the Marne. The project emphasises the use of oak in vinification, with blends typically comprising equal parts Pinot Noir and Chardonnay. The Sténopé range, starting from 2008, offers a yearly snapshot of the Aube region's potential. The 2012 vintage, noted for overcoming early climatic challenges to produce high-quality grapes, is vinified in 300-liter oak barrels and consists of 52% Pinot Noir and 48% Chardonnay, along with a small portion of old-vine Chardonnay from Chouilly in the Côte des Blancs. This blend differs from the tighter, mineral- driven styles of the Côte des Blancs, displaying more overt fruitiness and a softer texture.
