This special Power 50 issue celebrates this diverse group of impactful people and gives them the chance to talk about what they stand for. From top chefs, operators and game-changers to delivery heroes and plant-based pioneers, we explore what they’ve acomplished and touch on their big plans for the future. Growth seems to be the common trend. In this issue, we also explore the idea of veganism as a change agent. In Alserkal Avenue, we meet Patrick Jarjour of Moby Japanese Eatery to talk about how plant-based food can reduce harm to the environment. We also chat with Roman Mac-Crohon on the world’s most fashionable baked potato at his new restaurant Caviar Kaspia. From casual to high-end, they’re both venues that launched during F&B's great comeback. I can’t wait to see what happens next year. For Dubai, there will also be a selection of raw sh, pasta, risottos, fresh sh and more. The dessert menu will have some of Paris’ house classics but our chef patissier in Dubai will create many sweet surprises for our local clientele. “There is something very special about the Dubai branch. It was fully built and created just for us by local interior designers H&H. It gave us the liberty to design the space that we envisioned for Dubai.” The venue has two oors with separate entrances. One through the Gate Village and the other one on the ground oor with its own valet parking. The ground oor houses the restaurant, while the top oor is home to the lounge and bar area with an outdoor terrace. Mac-Crohon added: “The brand is very strong internationally and among the fashion crowd. The space is very elegant and gives the impression of belonging to a very exclusive private club.” Serving the world’s most fashionable baked potato Starting from AED380 and going all the way up to AED2,610, this Instagram- famous baked potato is own in directly from Paris and topped with Baeri, Royal Oscietra or Beluga caviar. “The baked potato with caviar is the star and protagonist of our story,” Mac- Crohon said. “The simplicity of a potato, married to the most luxurious culinary product, caviar, makes this dish so particular and exceptional. The potato is oven-baked twice and mixed with a series of ingredients that gives it its particular consistency and taste.” Caviar will be available to top eggs, pasta and toast, or just as a spoonful. However, the venue is friendly to those who don’t have an af nity for raw sh eggs. “Even though the restaurant is called Caviar Kaspia, and the baked potato with caviar is the signature dish, there are a lot of options that have no caviar at all,” Mac-Crohon said. In a city that loves to celebrate opulence, it’s surprising that it took this long for a restaurant dedicated to caviar to make an appearance. However, Ramon Mac-Crohon believes that this is the right time to have launched Caviar Kaspia in Dubai. The CEO said: “For many years, Dubai has been an epicentre of food and entertainment. But it was the way that it handled the pandemic that has taken Dubai to another level. To be considered an important international brand you need to be where all others are. That is, without hesitation, Dubai.” Founded in 1927, Caviar Kaspia’s rst home was in Paris at the Place de la Madeleine. It has since had a history of pop-ups like in London’s Mayfair and New York City’s Tribecca neighbourhood. In October, Dubai became the venue’s rst permanent home away from home. Adjusting Caviar Kaspia to Dubai “Dubai is a unique city and the venue Kaspia Dubai will be too,” Mac-Crohon said. “The menu features our iconic Caption here “The space gives the impression of belonging to an exclusive club“caterermiddleeast.com December 2021 8 NEWSNEWS Chic Nonna restaurant to have region’s largest wine cellar Byron Bathers Club, from Tom Arnel‘s EatX, takes inspiration from Australia’s celebrity hotspot, Byron Bay.
